Rice with chicken and vegetables recipe
We gather all the ingredients to prepare the rice with chicken and vegetables. Aside from the vegetables that we have used you can add others as eggplant or even the tomato.
Boil the rice in water with a little salt. To give you an idea, the ideal amount of rice per person, when it's dry rice, is 80-100 grams. I usually measured in scraps, but if you have a balance, we recommend that you weigh it.
Once boiled rice, drain it, cool water and set aside.
Tip: Cooking time depends on the manufacturer's instructions.
Cut the vegetables into small squares as indicated in the image. In the case of the carrot and Zucchini, peel them previously.
Put 2-3 tablespoons of olive oil in a frying pan and we are adding the vegetables in the following order: onion, peppers and carrot. Before adding the following vegetables leave each to cook about 3 minutes.
By with the preparation of this rice with vegetables, add the zucchini that normally it takes less to cook. Season and cook for 4 minutes more.
In another pan sauté the sliced chicken breast and put a little salt and ground black pepper. It will be ready in 5 minutes if the pieces are not too large.
Once we cook all the ingredients, add the cooked rice and chicken to our fried vegetables. Stir and salt to taste if necessary. You can also add any herb like Basil or oregano.
